Over three days on a 100,000+ acre cattle station in North Queensland, you'll get to experience what it takes to hunt wild chital deer, then get hands on to field dress, butcher and cook the harvest with chef Harry Foster.
You'll learn some easy recipes and pro tips on how to utilise the various cuts correctly to turn wild venison into genuinely delicious meals that you can make at home.
Group sizes are limited so that the experience can be personalised and everybody can get involved (you can be as "hands on" as you want to be or just observe and ask questions - no pressure).

FAQS
❓Do I need hunting experience?
No. This experience is designed for all levels. The guide handles all shooting; you're there to experience the hunt, learn field craft, and get hands-on with everything from field dressing through to cooking. No firearms licence or shooting experience is required.
❓Will I be handling firearms?
No. The guide carries and operates the firearms. You'll be in the field for the full hunt - the stalk, the approach, the animal behaviour… but the shooting is handled for you. From the moment an animal is on the ground, you can be as hands-on as you like with everything that follows.
❓How do I get to the property?
We'll email specific instructions closer to the date of the event. You'll need to arrange flights to Townsville (would recommend arriving the day before the experience starts) and transport to get to the property, 2 hours west of Townsville. We can arrange a group shuttle for an additional fee, which will be discussed with each group.
❓Can a minor attend this experience?
Yes - this is a family friendly experience, minors will need to be accompanied by their parent or guardian. The full participant fee applies for minors.
❓What about accommodation?
Accommodation on the property is in a comfortable “donga” style camp with all modern amenities including air-conditioning in each room, modern kitchen, hot water shower etc. There are two single beds per room so it’s best to bring a mate who doesn’t snore.
❓How much meat will I take home?
This depends on the success of the hunts but you should expect to go home with a meaningful amount of wild venison. We’ll have venison already prepared in advance of the course to share with all participants.
❓What's the cancellation policy?
A $500 deposit is required to secure your place. The deposit is non-refundable but can be swapped for different dates if notified at least 30 days prior to the experience. The remaining balance is due 14 days before the experience.
❓What if the event is cancelled?
If the event is cancelled by us due to unforeseen circumstances (weather, farm operational requirements, safety concerns etc), we’ll give you the option of choosing another date or a full refund.
